Key Responsibilities
- As the manager for the pastry department, you will be a key contributor to the concept and identity of the restaurant.
- Assist the Head Chef in creating the restaurant’s breads, pastries and sweet treats menu. The main purpose will be bridging the language, culinary and cultural connections between the Head chef, the rest of the kitchen team.
- Source ingredients from across China and build strong working relationships with local suppliers and vendors.
- Inspect the ingredients and produce sourced and ensure that they meet the restaurant’s high specifications and quality standards.
- Maintain a seasonal calendar, effectively plan resources to ensure that ingredients and produce are used at their optimal quality.
- Respect for the products, how it is stored, handled, processed, cooked, plated, and eventually presented to the guests should always be a thoughtful process.
- Responsible for maintaining and organising pastry specific equipment.
The Candidate
- A graduate of a reputable culinary institution with at least 5 years of relevant culinary experience in a high-end western restaurant.
- Experience creating unique and popular pastry products, as well as seasonal menus.
- Ability to source and select good ingredients and produce while managing cost and quality.
- As the Pastry Sous Chef, you will plate the food and sometimes present it to the guest in the dining room. Appearance and demeanour are very important factors in achieving a memorable dining experience for the guests.
- Ability to communicate confidently in English and Mandarin is important too.
- Willing to work irregular hours depending on the daily necessities of the role.
