Key Responsibilities
- A key member of the team who is tasked to build and improve the fluid process from sourcing the raw ingredients to delivering the finished dishes.
- Make daily early visits to the busy Shenzhen markets to source ingredients for the restaurant.
- Work within the budget and source the best quality ingredients at the best price.
- Manage the morning deliveries and the cooks who prepare the raw ingredients in the morning.
- Understand the philosophy of the restaurant and strive for perfection in the daily tasks and requirements of the job.
- Report directly to the Executive Chef.
The Candidate
- Understanding of the farm-to-table concept.
- A graduate of a reputable culinary institution with relevant culinary experience in a high-end restaurant.
- A good sense of the seasons, products and culture of China.
- Familiar with or strive to know the city of Shenzhen.
- Ability to communicate confidently in English and Mandarin, Cantonese would be a bonus.
- Ability to source and select good ingredients and produce while managing cost.
